Can anything save chopsticks?
The Challenges Facing Chopsticks in China
The Year of the Goat has not been kind to chopsticks, as integral a part of everyday life as breathing in the world’s most populous nation. With a recorded use dating back at least 3000 years – most people believe they evolved from twigs used to pluck heated food from the fire – it seems ridiculous to even suggest they could ever be under threat in a country so intensely proud of its cultural heritage.
But this humble eating tool has been subjected to a powerful three-pronged attack – and no, it’s not from the fork that is preferred throughout the Western world.
The Impact of the Sars Outbreak
First came this spring’s deadly Sars outbreak, which perhaps for the first time saw the almost universal use of chopsticks questioned among ordinary Chinese. With China at the center of the Sars epidemic, warnings against sharing food from the same communal bowls using (saliva-coated) chopsticks started to be taken very seriously indeed.
The Environmental Impact of Disposable Chopsticks
Then came renewed attacks from the nation’s growing environmental lobby over the enormous waste incurred by the widespread use of disposable wooden chopsticks favored by the vast majority of restaurants and fast-food joints. Government statistics indicate that China, which has a population of 1.3 billion, produces and discards 45 billion pairs of disposable chopsticks every year.
Linking Chopsticks to Arthritis
Now, they are being linked to another health scare – arthritis. Research on behalf of the American College of Rheumatology concluded from a study of more than 2600 people in Beijing that the long-term use of chopsticks could increase the risk of arthritis in the hands. The study questioned the group of 60-year-old residents about their use of chopsticks and then tested them both visually and diagnostically for signs of increased joint stress. Arthritis was found to be more common in the chopsticks-wielding hand, specifically between the thumb and the second and third joints on the first and third fingers.
While the researchers were careful to point to other studies linking arthritis to any repetitive use of the hand, they immediately came under fire in China. A doctor from a Beijing hospital dismissed the findings, stating that in his experience, he had never seen a case of arthritis linked solely to the use of chopsticks.
